Chocolate Cheesecake

Several years ago I made a cheesecake using one of my moms old cookbooks (Better Homes and Gardens New Baking Book- you can find it here.) It was so tasty that I've probably made it about a bazillion times since then! Christian is an especially big fan of these cheesecakes so I decided to whip one up for Valentines Day and thought I would share the recipe here as well. This recipe is super simple and if you're looking for the perfect chocolate cheesecake I would definitely recommend giving this one a try.

 

Chocolate Cheesecake
1 3/4 cups of crushed wafers or graham cracker crumbs
1/3 cup butter
4 ounces of semi sweet chocolate
1 ounce ounce unsweetened chocolate
3 8-ounce packets of cream cheese
1 1/4 cups of sugar
2 tablespoons of all purpose flour
1 teaspoon vanilla
4 eggs
1/4 cup of milk

1. Mix butter and crushed wafers to create crust. Press crust into the bottom of a springform pan and chill while preparing filling.

2. In a small saucepan combine the unsweetened and semisweet chocolate and melt on low heat.

3. In a large mixing bowl beat cream cheese, flour, sugar, and vanilla until smooth. While mixing, add melted chocolate and beat until combined. Add eggs all at once and beat just until everything is combined. Stir in milk.

4. Pour the filling over your already prepared crust and bake at 350 degrees for 45-50 minutes. Cool for 15 minutes, remove pan and cool for another hour before serving.


I would recommend baking your cheesecake in a water bath to help prevent it from cracking. This is super simple and is explained in detail here.


I am the absolute worst about going to the grocery store for a few specific things and forgetting to buy at least one of said things. When I made my valentines cheesecake I forgot to buy unsweetened chocolate . I didn't feel like running to the grocery store so I got innovative and substituted with a few sprinkles of unsweetened cocoa powder. This seemed to work great!
 
Now for the icing. I typically change up my topping each time I make this recipe. This time I came up with a simple whipped chocolate topping.


Whipped Chocolate Topping

1/3 cup heavy whipping cream

2 oz milk chocolate

1 tbsp. cocoa powder

1 tsp vanilla

1-2 tsp powdered sugar

To make the topping I combined the whipping cream, cocoa powder, vanilla and powdered sugar and beat the mixture until it thickened. After melting the 2 oz milk chocolate I added it to the whipped mixture and beat for several seconds.

Winter Favorites

Today I wanted to share just a few of the products that I've been loving this winter. 

Shea Moisture Argan Oil & Raw Shea Anti-Aging & Softening Dry Oil Mist

Whew, that's a long name! I LOVE this stuff. I purchased it several months ago after trying and loving Shea Moisture's Argan Oil and Raw Shea Hand and Body Scrub. This product is so versatile and the more I use it the more ways I find to use it. 
I use this as a face and body moisturizer, eye makeup remover (just be careful not to use too much or get it in your eyes- I typically just spritz a little onto a wipe), and recently I have began adding it to my mousse foundation to keep it from becoming too heavy or cakey. With this oil, the possibilities are endless! All of Shea Moisture's argan oil and raw shea products smell wonderful. I would describe the smell as very warm and natural. In addition, this brand is great about leaving out harmful ingredients such as parabens and formaldehyde (you can visit their website for a full list of the harmful ingredients that you wont find in Shea Moisture products). I have been SO impressed with every Shea Moisture product that I have tried thus far and I would definitely recommend trying out their products, especially this oil mist! Bath and Body Works Aromatherapy Stress Relief-  Eucalyptus Spearmint

I have always loved the Bath and Body Works aromatherapy line and right now one of my absolute favorite scents is the eucalyptus spearmint. My favorite products in this scent are the body lotion, hand sanitizer and three wick candle. This candle, y'all... it blows my mind  (I have one burning on my coffee table as I type this). I can literally light it for five minutes and smell it all throughout the house. In fact, I can smell it even when it isn't lit! Bath and Body works candles can be a little bit pricey but several times a year you can catch them on a really great sale. If you're looking for a new scent to love, check this one out for sure. NYC Expert Last Lip Color in Creamy Caramel

When I bought this product I definitely did not expect to love it as much as I do! The color is so warm and is perfect for the fall and winter seasons, plus, for two bucks its staying power is pretty good. In addition to its color and staying power, I love it because it is smooth and doesn't dry out my lips during these chilly months. Plus, like I said earlier, it costs $1.99. Enough said. You can purchase this at your local drugstore or here on the NYC website. 






Berkshire Blanket Modern Comfort Throw- Grain

We were given this blanket as a wedding gift and I love love love it! We have this in the color grain, which is a creamy off-white color. I have been decorating with a lot of creams and warm tones this winter and this blanket looks absolutely perfect in our living room! More importantly, it is unbelievably soft and perfect for snuggling up on the couch on a chilly day. Another thing I love is that this blanket is big enough to where I'm not constantly pulling it down to cover up my feet but small enough to easily fold up and throw in my blanket basket. This is just an all around great blanket and to top it off, its affordable too. Check it out at your nearest Bed Bath & Beyond or on their website.

Super Bowl Cupcakes

As many of you know, today was Super Bowl Sunday! I have never been a huge football fan but have always loved the Super Bowl for its commercials, excitement and food. Christian is a huge Panthers fan, so this year was particularly exciting for us. In lieu of all this, I decided to cook up some festive cupcakes for the big day.

Those of you who know me know that I don't always feel particularly comfortable in the kitchen. I wouldn't call myself a bad cook, just a cook in training :)Typically I would have used a box cake mix and called it a day, but instead I chose to do some research and make my own cupcakes from scratch. Overall I was very happy with how they turned out! About halfway through filling my cupcake pans I ran out of cupcake batter and ended up using a mix for the rest. I know, I know. Old habits die hard. I chose to go with a homemade electric blue cream cheese icing and to top them off I garnished with a few pearl candies. Below I have included the link to the Food Network vanilla cupcake recipe that I used, as well as my recipe for homemade cream cheese icing (super easy, y'all).

Vanilla Cupcakes 






Cream Cheese Icing

  • 1 packet of cream cheese
  • Roughly 2 cups of powdered sugar
  • Desired Amount of Vanilla Extract
  • Food Coloring (if desired)
Using a mixer or hand mixer blend powdered sugar into cream cheese. I would reccomend doing this 1/2 cup at a time and adding until you feel that the icing is sweet enough, as this can be subjective. Add vanilla and food coloring.

First of all, welcome to my blog! Here I hope to share some of my ideas and adventures. In the past I have shied away from the idea of blogging due to my lack of a "niche." I love so many things, how in the world was I supposed to pick just one? For that reason this blog will include a little bit of everything that I love. You may find recipes, home decor, my favorite products, updates on Christian and I's adventures or words and scriptures that God has laid on my heart. I've been cooking up a lot of really fun post ideas so stay tuned!
